Breakfast Quinoa Egg Cups For A Day Of Energy

I discovered this new recipe for my family this past weekend.  We are always rushing out of the house in the morning with no time for a good meal.  Here is a great make ahead recipe that should be good in your fridge for days.  Its a hit from the kids to my husband alike!  Hallelujah!  Hope this leads to great breakfasts in your home!

Ingredients 

·       2 cups cooked quinoa (about 3/4 cup uncooked)

·       6 egg whites

·       1 zucchini, shredded

·       1 cup shredded sharp cheddar cheese

·       1/2 cup green peppers

·       1/4 cup parsley, chopped

·       2 Tablespoons parmesan cheese

·       2 green onions diced

·       salt & pepper  

Instructions  

·       Preheat oven to 350 degrees. Combine all ingredients in a large bowl and mix to combine. Liberally spray a mini muffin tin with non-stick spray and spoon mixture to the top of each cup. Bake for 15-20 minutes, or until the edges of the cups are golden brown. Do not under bake or they won't come out of the pan. Let cool for at least 5 minutes before removing from the mini muffin tin. 

Remeber make these with veggies your family loves!  Replace it with mushrooms, cilantro, etc and play around with your favorites!  Enjoy!

    This sounds delicious! Growing up we ate a lot of cereal for breakfast and I don't want that for my kids. This sounds delicious and healthy! Can't wait to give it a try.
