
Today is Monday, which means it's a day you're encouraged to skip on meat. Tomorrow is Mardis Gras and if you're interested in keeping up the plant-based diet for at least another day it is absolutely possible. For many, holidays are an excuse to over-indulge and "cheat" on their healthy eating, but it's actually possible to find a nice balance between tasty food that's somewhat good for you too. Here are some dairy and meat free recipes that will keep away the bad cholesterol on Fat Tuesday.
Snack/Side Dish: Fried Pickles ~ if you like pickles and fried food get ready for a perfect combination of salty, crunchy, and oily flavor!
Appetizer: Bourbon Buffalo Mole "Chicken" Wings with Bleu "Cheese" Avocado Oil Aioli and Frisee Carrot and Celery Stick Slaw with Toasted Cumin Vinaigrette ~ that title says it all!
Entrée: Creole-Style Jambalaya: "Jambalaya is a spicy southern rice dish with tomatoes and veggies. This vegetarian jambalaya recipe is Creole style, which means that the rice is simmered in tomato paste, rather than just water."
Dessert: Vegan Beignets ~ "square or round, savory or sweet, fruit-filled or plain dough" that traditionally contains milk and eggs. "But these two ingredients have simple substitutes, making for a very easily veganizable recipe."
