I have friends...little, green friends! Now, I know St. Patty's Day has passed and everyone is still thinking of leprechauns, but I'm talking about the edible kind of friends. Friends that are dependable...and healthy...and well, tasty - I'm talking about herbs!
Having your own "little friends" is easier than you think. Growing on a windowsill, you can have them year-round and add them to your favorite dishes. My favorite herbs are basil, parsley, and oregano - with extra emphasis on the basil!
You can find cute containers for planting these little herbs everywhere. From plant pots to cute tea cups to windowsill boxes, there are many options. Just add the seeds into a good organic soil that's appropriate for growing food, add water and sun, and voilà!
A few things worth mentioning:
- They love sun and you'll want to water often. I check mine every day and whenever the soil is dry, I add a small amount of water to it. (Caution: the smaller the pot, the sooner it dries out).
- Once planted, it takes a few weeks for the seeds to emerge and become productive. Once they have begun to grow, just pinch off the amount of leaves you want and add to your favorite dishes. I love adding cut parsley to potatoes w/ olive oil; basil and oregano to homemade organic spaghetti sauce or grilled vegetables; and peppermint to tea or by itself as a breath freshener. Peppermint is also an excellent stomach soother.
- Lavender is also worth mentioning. I'm growing that in my bedroom so I can enjoy the calming, therapeutic smell while I sleep. My seedlings are just beginning to emerge and I look forward to watching them grow and filling my room with their beautiful scent. Not to mention, they'll be a gorgeous addition to my décor!
