Meatless Monday: 5 Cleansing & Detoxifying Vegan Recipes

Spring has sprung and summer is right around the corner (we're already past the middle of April!). Whether your mind is still focused on radioactive food or now obsessing over how you'll love in your bathing suit, here are some recipes to incorporate into your diet to prepare yourself at a healthy rate. When cleansing your body for health or weight reasons, it's important to take it slow, steady, and consistent. The plant-based diet is extremely detoxifying on its own, but these recipes are made with unprocessed ingredients and few are cooked, which retains the most nutrients. And best of all, these are all easy to make!

Beet, Carrot, Apple,and Ginger Juice (3/4 down the page) ~ "Beets are said to lower blood pressure, carrots pack a super beta-carotene punch, apples are cancer-fighters and ginger just loves your heart."

Fire-Roasted Gazpacho ~ "It contains plenty of tomatoes, excellent antioxidants that hold abundant amounts of Vitamins C, A and K. Tomatoes also have lots of lycopene, a carotene that may prevent certain types of cancer."

Dandelion and Bitter Greens Salad with Tarragon-Lemon Vinaigrette ~ Both dandelion and chicory improve liver function, are beneficial to digestion, and contain calcium and potassium. Parsley purifies the blood, stimulates the bowels,and is loaded with Vitamin C and iron.

Carrot and Burdock Root Stirfry ~ "Burdock will support and soothe your liver. Its cooling and alkalizing effects are helpful in relieving stagnation in your blood and organs. It promotes healthy kidney function and expels uric acid from the body. This recipe is a great one to add into your diet if you want to overcome sugar cravings."

Pesto Kelp Noodles ~ "Kelp is known to aid the metabolism, boost energy, aid in digestion and they contain an abundance of minerals."
