"Holidays" like Mother's Day tend to be more about stores trying to sell products than actually celebrating love for one another, and all of the consumerism isn't very sustainable. So why not stay at home and whip up something tasty for your mom instead? Here are some healthy recipes that will keep a smile on the whole family's face and give you plenty of energy to enjoy the day together.

Tropical Fruit Parfait ~ a healthy take on the traditional dairy-based treat, this can be enjoyed any time of the day. If you can't afford to take mom on a tropical vacation, this is the next best thing.

Vegetable Quesadillas ~ lots of delicious veggies packed into a creamy, cheesy quesadilla!

Lemon Curd on Lemon Poppyseed Muffins ~ these would be perfect into a gift basket for your mother, especially since vegan lemon curd is very hard to find in stores.

Coconut Mango Cupcakes ~ take any vegan cupcake mix or recipe and with a few substitutions you'll have a dessert that tastes like a relaxing day at the beach!

Edible Arrangement ~ get a little fancy and make your momma something beautiful and yummy at the same time! No need to buy one of these arrangements - they're super easy to make yourself!
