Meatless Monday: 5 Healthy Recipes for Memorial Day

If you're lucky, you'll get a sneak peak at summer on Memorial Day, which usually means hanging out and relaxing with friends on a warm sunny day. This holiday is also a great excuse to eat lots of food, which usually consists of a lot of greasy, fatty, sugary dishes. Why pack on extra pounds when bathing suit season is right around the corner? Here are some healthy recipes that are not only easy on your mid section, but cruelty-free as well. 

Watermelon Frosty ~ "Fresh, juicy watermelon has an instant gratification effect on people" and this chilly drink gives it a whole new, refreshing twist

Grilled Fruit Kabobs ~ a sweet variation on the classic veggie kabob

Jicama Dill Salad ~ "Jicama is a wonderfully diverse tuber that originated in Mexico. It’s white flesh is juicy, crunchy, a little sweet and packed with fiber. It is low in calories, one cup only has 46 and contains a good amount of vitamin C. It makes a wonderful base for this salad."

Memorial Day Mushroom Burger ~ a savory, filling, savory alternative to meat-based burgers (there are some bonus recipes following this recipe)

Eggplant Pizza Rounds ~ "Who needs a crust to make pizza? Grill up some eggplant topped with pizza sauce, cheese and, Italian spices. Use vegan cheese, if you’d like. This one is great for gluten-free folks, as well."

    The Eggplant round pizza is a must. Would've been great for my playoff game today! The Watermelon frosty is giving me some ideas for ending my day...heh heh.
