One complaint non-vegans have about vegan food is that it doesn't fill them up, but this is a misconception and really depends on what you eat. There are plenty of ways to make satisfying meals that will leave you feeling full for hours - here are just a few examples.

Saucy Tempeh Curry ~ "Curry is a great vegan comfort food, while also staying on the healthy side. The only fat in this recipe is olive oil, and it is so fast to make!"

Mushroom Barley Soup With Fresh Herbs ~ "Mushroom Barley Soup doesn’t have to be that staunch bowlful of murky stuff that your stepfather eats out of a can all winter. In fact, it can be downright right spring-like, with bright flavors from fresh herbs and springtime’s bounty of veggies."

Mediter-Asian Couscous Salad ~ "Borrowing both an Asian and Mediterranean sensibility, cooked pearl couscous and fresh veggies meet edamame, all married together beneath of light blanket of miso dressing. Refreshing and light but still filling and full of flavor, it’s the kind of salad that’s just as happy being thrown on a plate for a rushed weekday lunch, taking in the glorious AC, as it is being bundled up with care for a picnic on the beach."

Orange Sesame Tempeh Stir-Fry ~ "The sauce is thick and tangy and the tempeh is nutty and blends seamlessly with the brown rice" Best of all, it's really inexpensive to make

Caribbean Black Beans & Rice ~ a take on the tropical Betty Crocker recipe, with a nice combination of sweet and savory flavors
