Meatless Monday: What To Do With Party Leftovers

By the time you read this you've probably finished celebrating 4th of July and are likely feeling full after a day of eating with friends and family. There's also a good chance you have a fridge full of leftovers, especially if you hosted the party. Leftovers can be delicious, but it's even more fun to turn them into something new, so here are some creative suggestions and recipes that happen to be vegan too.

Put together an Antipasto plate and set it out for everyone to munch on as an appetizer before your next meal.

Turn leftover veggies into a burger or pancake

Make a grain dish with leftover vegetables, like this Nutty Veggie Couscous (omit the butter)

Get creative and make something fun like Deviled Avocado stuffed with leftover coleslaw

Combine leftover beans and rice and turn them into a cold salad

Wrap it up! Pile your leftovers into a tortilla or nori sheet.
