I'm sure by now, you have exprienced the heat wave that has reached from coast to coast. People are looking for ways to find quick relief from the overwhelming temperatures that have been on the rise and are steadily increasing. Instead of jugging a coco-cola, take a few minutes to whip up some tasty and healthy frozen treats.
Popsicles have come a long way over the years. I remember going to the corner store as a child and buying gigantic popsicles for twenty-five cents. You know, the ones that you can buy in a huge box at the super market that are in individual plastic wrappers, packed with sugary syrup, and you push up when you eat them? Except the kind I bought were almost the size of my arm, and I can only imagine how high the sugar content was, or how many different toxic ingredients were inside.
Now that I am a mom and have a small child of my own, I work hard to insure he makes healthy choices when it comes to food. We have fun together making different types of juices and popsicles, and both can be done at once. If you have a juicer, it sure makes things easier but a blender will work just as well.
I've found a few recipes that look delicious and fun to make!
Honeydew Melon Pops -you can substitute honey with agave. The use of plain yogurt really minimizes the amount of sugar included.
Strawberry Mango Popsicles - these are great for diabetics if you leave out the sugar!
Monkey Tails - these look amazing and are on my to-do list! Enjoy Life makes great vegan, gluten free chocolate chips that would really make this recipe yummy! I recommend using a double boiler to melt the chocolate rather than a microwave so it doesn't burn.
Honeyed Peach and Blueberry Pops - One word, YUM!! My son loves blueberries, this recipe will be a favorite in our house for sure!
Homemade Fudge Pops - substitute with almond milk and agave to veganize this recipe. (scroll down on the websites page to view the recipe)

You can make your own recipes by juicing any type of fruit and pouring into the popsicle molds. I prefer not to add sugar, most fruit has it's own sweetener. If you have a bit of a sweet tooth, add some evaporated cane juice or agave to the mix. Be creative and mix different fruits together. If you want a fun looking pop, layer the fruits one on top of the other for a colorful design!
