Barnes of OrganicToBe.org suggested a new twist to an organic breakfast that
not only provides the nutritional benefits of an organic diet, but will leave
kids asking for them day after day.
INGREDIENTS
1 cage free organic egg (slightly beaten)
2/3 cup organic yogurt- plain or flavored*
2/3 cup organic milk or soy milk
3/4 cup organic unbleached all purpose flour*
1 tsp salt
Expeller pressed canola oil (to prevent sticking)
In
a bowl, mix the egg and yogurt until smooth. Add milk, flour, and salt
until batter is smooth. If batter becomes too thin, add more flour.
Next, heat skillet to medium heat and spray cooking oil to lightly coat skillet or pan. Drop quarter cup fulls of batter into pan. Cook one to two minutes and watch for bubbles to appear on the surface before flipping. Cook until lightly browned on each side.
Top with fresh organic fruit, yogurt, and maple syrup.
Recipe makes 10, four inch pancakes.
*if using flavored yogurt- the batter will take on the color of the yogurt and will taste sweeter in comparison to plain yogurt.
