Finding a sweet and satisfying snack that still appeals to the environment is tricky. Thankfully, Gabreial from Vintage Indie has saved the day with her recipe for Organic Honey Maple Caramel Corn! The recipe is as follows:
INGREDIENTS:
1 Cup Organic Popping Corn Kernels
4 TBS Butter (suggested: Amish Salted Rolled Butter)
1 TBS Unsulphured Molasses
1/3 Cup Raw Filtered Honey
3 TBS Grade B Maple Syrup
1/2 tsp Pink Sea Salt (regular salt will suffice)
1 tsp Vanilla Extract
1/2 tsp Baking Powder
First, preheat oven to 300 degrees Fahrenheit. Pop one cup of corn kernels and place into a large lasagna pan. When popping the kernels, an air popper that requires no oil is suggested.
Next, in a small saucepan, add the remaining ingredients, minus the vanilla extract and baking powder. This includes the butter, unsulphured molasses, raw filtered honey, maple syrup, and pink sea salt. Warm on the stove at medium heat until the mixture comes to a rolling boil. Boil for three minutes stirring constantly to avoid burning the mixture.
Remove the mixture from the stove and stir in the vanilla extract and baking powder. Continue to stir in order to avoid the mixture overflowing in the pan. Pour mixture over popcorn and stir to combine the ingredients.
Finally, place popcorn in the oven for fifteen minutes. Check to make sure that the popcorn doesn't burn and remove from the oven to stir the mixture from the bottom up. Place popcorn back in the oven for another ten minutes, and remove to cool.
