Food Friday: Bok Choy

As a vegan a lot of people ask me where I get my calcium, and I tell them: the same place cows and other animals get their calcium ! Greens! Greens are filled with lots of calcium and it really does your body good! 

One of the best greens for calcium? Bok choy! This is one of my favorite greens. If you can not tell already, I'm a little green obsessed, I LOVE GREENS. And I'm not afraid to admit it. Greens helped save my life, so we have a little big of a history. 

You might have had bok choy in asian dishes and with good reason, bok choy is more commonly known as "chinese cabbage" and has it's roots in asian countries. The Chinese people knew how awesome bok choy was a long time ago, when the Ming Dynasty used it regularly for medicinal purposes.  

It's a delicious vegetable and it goes well with so many dishes. It has a rich almost buttery taste to it. I really enjoy putting it in "steam fry" - just brown rice, bok choy, other chopped veggies like watercress, carrots, onions, peas and putting it in a big frying pan with a little water.

*note on this one - I leave out the oil for frying and just steam fry it - it tastes a lot better that way.
