This easy salad is a tangy, refreshing lunchtime favorite.
Ingredients:
1 organic free-range boneless, skinless chicken breast, cooked and cubed
1 green apple, chopped in thin slices and diced
1 celery stalk, chopped thin
¼ cup chopped parsley
½ cup apple cider vinegar
2 tablespoon olive oil
1 teaspoon agave nectar or sugar
Salt to taste
Preparation:
Mix together oil, vinegar, and agave or sugar. Add onion, celery, and parsley. Pour over chicken and coat with dressing. Add apple. Refrigerate 1 hour. Serve alone or on a bed of lettuce.
