California Corn Salad
Back to contest entriesCalifornia Corn Salad Recipe is something that I learned from my daughter and it has become a hit in my house with my friends. Its an easy recipe and one which should be made a day ahead of time to let the ingredients incorporate. I hope you enjoy it with your family this summer.
Ingredients:
4 cups of corn, frozen no need to thaw or 7-8 ears of corn on the cob cooked and cooled
1/2 cup diced red onions, red bell peppers, cilantro
1/4 cup of lime juice
Sauce:
1 tablespoon of olive oil
1 garlic clove minced
1/4 tsp of cumin
Salt and Pepper to taste
Mix the sauce together seperately and then mix everything together in a bowl. Let it sit overnight and enjoy!
