Yummy Vegetable Lentil Soup

This is such a simple recipe and the soup is delicious!

Ingredients:

1 Large Yellow Onion

4 Red Peppers

2 Cups Fresh Baby Spinach (I've also used frozen which works out well too)

2 Cups Red Lentils

1 Clove Garlic

1 Large Carrot

4-6 Cups Vegetable or Chicken Stock (Add more or less depending on how you prefer the thickness of your soup)

2-3 Tablespoons Olive Oil

First I cut up all my veggies, if you plan on blending the soup I would chop everything up small if not larger pieces are better for the unblended version. Make sure to sift through the lentils checking for rocks or any other matter that's not a lentil!

Heat the olive oil in a large pot, add the garlic and let simmer, then add the onions, carrots and peppers. Make sure there is enough olive oil to fully coat all the veggies. Allow the veggies to cook for at least 10 minutes or until soft and the onions have become translucent. Then add your stock followed by the lentils. Bring the pot to a boil and then let simmer for 45 minutes. Add salt and pepper to taste. 

At the very end add the spinach and stir together.

This soup is also great blended, I use a basic immersion blender. After I blend I add the spinach.
