What is it about pasta dishes that is so comforting? We yearn for them when we need to feel full, physically or emotionally. Our mouths revel in their warmth and the salty, creamy sauces, putting us in a state of pure bliss for the short time it takes to consume them. However, often these dishes are exactly the opposite of what our bodies need - they are full of empty calories, low in nutrition, and high in cholesterol. Luckily there are some healthier ways to prepare these dishes. Below you will find some mouth-watering plant-based lasagna dishes that will leave your body and the planet wishing they had the ability to write thank you notes.
