Recipe: Revival Chopped Veggie Salad

Take one bite of this lively salad at lunchtime and you’ll feel revived. Use whatever veggies are seasonally available and can be eaten raw or lightly steamed and cooled.

Chop any combination of the following organic veggies into approx. ½ inch pieces, making a total of 1 ½ cups chopped:

Cucumber

Tomato

Asparagus, steamed and cooled

Red, green, yellow, or orange bell pepper

Green bean

Sugar snap pea

Radish

Red onion

Combine veggies in a bowl.

Prepare Revival Dressing:

2 tablespoons organic raw unfiltered apple cider vinegar

1 tablespoon organic extra virgin olive oil

½ teaspoon raw agave or honey

Dash of salt

Pour dressing over veggies and refrigerate at least 10 minutes.

Pour salad mixture over a bed of organic lettuce and enjoy!
