This flourless, sugar-free breakfast is delicious, easy, and high in fiber and protein. The recipe serves one, so raise amounts proportionately if cooking for more.
Ingredients:
½ cup oat bran
1 cup blueberries (fresh or frozen)
2 local organic eggs
1 teaspoon ground flax seed
¼ teaspoon ground cinnamon
pinch salt
1 cup organic plain yogurt
Preparation:
Beat eggs in a large bowl. Add oat bran and blend until even, working out any lumps. Add salt, flax seed, and cinnamon. Blend in blueberries. Pour mixture into a greased 8-inch round cake pan. Bake 10-12 minutes at 300 degrees until you can poke with a knife in the center and it comes out clean. Remove from oven and allow to cool 10 minutes. Place oatcake on a plate, pour on yogurt, and enjoy.
