
I come from the Pacific Northwest and up there, we know our chowder. Clam chowder, salmon chowder, potato and corn chowder. All very yummy but one I'm going to share with you is a vegetarian dish called cheese chowder.
Ingredients include:
¼ c finely chopped onion
2 tbsp butter or margarine
¼ c flour
2 c. milk
1 ¾ c chicken broth
¼ c finely diced carrot
¼ c finely diced celery
½ c cubed sharp American cheese
Dash of salt and paprika
Cook the onion in the butter till its tender. Blend in flour and add in remaining ingredients except cheese. Cook and stir till you get a thick and bubbly substance. Reduce the heat, add cheese and continue stirring till the cheese is melted. Simmer for 15 mins and enjoy!
Of course these ingredients are just a guideline, you can tinker around and add or subtract according to your taste.
